My parents have an awesome garden this year and have been so generous so share its bounty with us! I took some fennel fronds and I was pondering what to do with it... and since I love that the Great British Baking Show is back on PBS... I immediately thought scones! (I am also counting down to my UK Scotland and Ireland visit this fall as well!)
All you need is a food processor- I love my Ninja! Here is the super easy recipe:
- 1/2 to 3/4 cup chopped fennel fronds
- 1 inch fresh ginger
- 2 cups whole wheat flour
- 2 cups white unbleached flour
- 1 stick cold butter
- 4 tbs coconut oil chilled until solid
- 4 egg yolks
- 4 tsp baking powder
- 1/4 cup Greek yogurt
- 3/4 cup almond milk
- 1/3 cup honey
- chopped dates to top
Blend the fennel fronds and ginger in the processor until well chopped. Add the rest of the ingredients and blend just until incorporated. Dump on to a floured surface and shaped into a rectangle with 3/4 inch thickness. Cut into longer rectangles and then smaller squares and then half them diagonally. Press in the chopped dates to each scone. Brush with some of the leftover egg whites. Bake at 400 degrees until golden.
Looks delicious! Good job making up your own recipe - some people "talk" about cooking healthy from scratch - you, however "DO" it...(smile).
